A Refreshingly Bitter Classic with a Fascinating Past

WHAT IS TONIC WATER? Tonic water is a familiar fixture in bars, restaurants, and fridges around the world—but what exactly is it? While it’s most famously paired with gin, tonic water is more than just a mixer. With a unique flavour profile and a rich history, tonic water holds its own as a distinctive beverage with both classic appeal and modern relevance.

Tonic water is a carbonated soft drink that contains quinine, a naturally occurring compound derived from the bark of the cinchona tree, native to South America. Quinine gives tonic its characteristic bitter flavour, which is balanced with carbonation and, in most commercial varieties, a touch of sweetness.

While modern tonic waters are often lightly sweetened and refined, traditional versions were much more bitter—and originally consumed for medicinal purposes.

WHO CREATED TONIC WATER AND WHY? Tonic water dates back to the 19th century, originally created as a way to prevent and treat malaria. British colonists stationed in tropical regions, particularly in India, consumed quinine as a protective measure against the disease. However, quinine’s bitter taste made it difficult to take regularly. To make it more palatable, they began mixing it with soda water and sugar—and often added a splash of gin, which was also part of their daily rations. The gin was provided to boost morale, help soldiers relax, and improve their well-being in the harsh and often dangerous environments they were stationed in. The result? The now-iconic gin and tonic was born.

IS TONIC WATER JUST FOR GIN? While tonic water is most famously known for its role in the gin and tonic, it pairs well with a variety of other spirits and non-alcoholic beverages. Some popular uses include:

Vodka Tonic: A clean, crisp option for those who prefer a more neutral spirit.

Tonic with Tequila or Mezcal: A refreshing twist on classic pairings.

IS TONIC WATER HEALTHY? Tonic water does contain quinine, which was historically used to treat malaria and alleviate leg cramps. However, the amounts found in modern tonic water are much lower than the medicinal doses once used for therapeutic purposes, and quinine is now primarily used as a flavouring agent in beverages.
